aww man! i have such a good recipe for this weeks ingrediants :( it's my pre-af carb fest. if i have all the ingrediants i might make it anyway and share it because it is really really good!!

Pasta with a Bacon and red potato cream sauce.

Recipe: I dont really use measurements I apologize in advance.



Ingredients:
Pasta( any kind)
Red potatoes ( chopped into cubes)
6-7 strips bacon
4 chicken breast
1/2 chopped onion
1 container of mushrooms chopped
cream
butter
flour
parmesan cheese
salt
pepper
and any seasonings you would like.



Cook chicken however you like its going back in the pasta.



Boil pasta per the directions on the box.
Put pasta in cold bath and add potatoes to boiling water. Blanch potatoes in water. (2-3 minutes)



while cooking pasta and potatoes, Cook bacon and save bacon fat. when bacon is done add potatoes to get them crispy.



Remove potatoes add onion till soft. then add your mushrooms. add a little butter and flour to make a roux. add cream and bacon and potatoes(reserve a little to put on top) back in. Cook until your desired thickness. Add Parmesan cheese, salt, pepper to taste. Serve over pasta Add chicken on top. Add a little Parmesan cheese on top and you are done!

I made couscous with sausage, onions and red potatoes!

Ingredients:

1 package of couscous
1 package of SKINLESS turkey smoked sausage (I used both pieces in the pack)
1/2 an onion
8-10 red potatoes, depending on size
2 1/2 cups of water OR broth (I used water)
2 tbsp oil OR butter (I used oil)
spices (I used seasoning salt and granulated garlic)



This is a VERY heavy dish since it's two starches.



Directions:
Dice half an onion and all the potatoes and put into a LARGE saucepan with the oil on medium heat. Then boil the broth or water in a separate container (I used water in my tea kettle). Cut the sausage into pieces 1/2 inch or so thick. Once the water or broth is boiling, add the spices, sausage and couscous to the potatoes and onions and pour the boiling water/broth over the top of it. Put a lid on it and let it simmer for 6 minutes, then stir, replace lid and let simmer until all the liquid is absorbed (another 4-6 minutes.) Serve with a salad or other fresh veggies or maybe even melon.

mexican penne pasta



Ingredients:
1.1 can tomato paste
2.1 1/2 lbs ground beef
3. 1 packet ranch (the dry kind)
4. 1 packet milk taco seasoning
5. 1/2 bag rice
6. 1 can corn
7. 1 can black beans, strained and rinsed
8. 1 can beef broth
9. dash of oregano
10. dash of chili powder
11. 1 cup baby carrots
12. cilantro
13. 1/2 box penne whole wheat pasta
14. 2 cups shredded mexican cheese
15. 1 red potato rinsed, peeled and chopped into pieces



instructions:
Combine ingredients 1-12 in a slow cooker on high for 5-6 hours or until ground beef is cooked. Get an 8x10 pan and layer the bottom with the mixture. Then layer in penne pasta, covering it once again with the remaining mixture. Throw potatos on top and sprinkle with cheese. Cover with tin foil and bake at 350 degrees for 20 minutes, or until pasta is cooked and cheese melted.

I made honey dijon chicken (thighs) with red potatoes and green beans served over peperini (pasta)

Recipe:



Ingredients:



1 lb boneless, skinless chicken thighs (or breasts)
2 tbsp honey dijon mustard
1/2 cup cream
1 can cream of chicken soup
1 1/2 cups green beans (about 2 medium sized handfuls)
4 medium sized red potatoes
about 200 grams of peperini (or whatever you choose) pasta



Directions:
Preheat oven to 350. While oven is heating, poke some holes into the potatoes and put them in (the oven). Heat some oil -enough to cover the bottom of the pan) on medium high heat, put chicken top down and cook until browned on one side (but not cooked through). When chicken is brown, remove from heat, take the potatoes out of the oven, let them cool and then cut them into cubes. Brown potatoes in the same pan used for the chicken (you can skip this part if you want because they will finish cooking in the oven but I wanted to brown mine). Mix the cream of chicken soup, mustard and cream in casserole dish. Add the chicken, potatoes, and green beans. Cook 30-45 minutes until everything is done. 10 minutes before chicken is done heat water on the stove and cook pasta about 8 minutes until it's done.



My friend Taylor gave me her mom's recipe for honey dijon chicken, and I made a few tweaks (hers called for mushroom soup and I added the potatoes and green beans)



It was really yummy but heavy on the tummy. Next time I would make it with chicken breasts and omit the pasta.

It would have been better if I had remembered to get mushrooms. :x It was good but like I said, very heavy and it made A LOT. Enough for gosh, probably 8-10 people!
