i get italian bread crumbs, parmesan cheese, some salt and pepper and mix it all up. beat and egg. slice the zucchini and put each piece in the egg then the crumb mix. use a cooling rack on top of a cookie sheet and lay them in a single layer. bake at 350 for about 15 mins or so until golden brown. you still get the fried taste without frying it

I just steam it and eat it all boring like. Sometimes I put it in pasta sauce.

I saute it in olive oil and use a little bit of salt, garlic powder, and pepper.

I grill it (you can do it in your oven broiler or with a cast iron griddle inside), julienne it and sautee it, or dice and sautee it and add it to pasta or couscous

The other night i sliced mine up with some yellow squash and onion and put it all in a baking dish with some chicken breasts, sprinkled with salt and pepper and baked it in the oven. Very good.
