What kind of soup do you use? Cream of brocelli I'm guessing. That goes sound pretty good. I swear if I was more creative I'd have no problem. :lol:

Shredded Tex-Mex Crock-Pot Chicken
4 boneless, skinless chicken breasts
1 1/4 teaspoon cumin
1 tablespoon chili powder
1/2 teaspoon coriander
1/4 teaspoon paprika
1 1/2 teaspoon salt
1/2 tsp black pepper
1/3 cup chicken broth
1/3 cup (packed) cilantro leaves, chopped
1 large onion, chopped
1 jalapeno, seeded and minced
4 garlic cloves, minced
1 tablespoon olive oil
Heat the oil in a medium sized saut

BASIL ARTICHOKE CHICKEN (IN THE CROCKPOT)
Ingredients: Serves: 6,
6 boneless skinless chicken breasts (or thighs)
2 leeks, sliced
3 roma tomatoes, diced
8 ounces artichoke hearts (frozen or jarred but needs to be drained)
1 1/2 cups white wine (can substitute chicken broth or do half wine or half broth)
1 cup parsley, minced
1/4 cup basil, minced
2 garlic cloves, minced
3 tablespoons white balsamic vinegar
2 tablespoons olive oil
1 teaspoon cayenne
1 teaspoon paprika
1 teaspoon salt
1/8 teaspoon pepper
Directions: Prep Time: 15 mins
Total Time: 4 1/4 hrs
1 Season chicken with salt, pepper, paprika, and cayenne.
2 In large non stick skillet, brown chicken in 1-2 tbsp olive oil over med-high heat until golden on both sides. Time will vary between breasts and thighs; may need to do in 2 batches.
3 Remove golden chicken pieces and place in crock pot.
4 Add vinegar, garlic, and leeks to skillet and cook 1 minute.
5 Stir in artichoke and wine. Cook 1 minute. Pour all ingredients in skillet over chicken in your crock pot.
6 Cover and cook 4-5 hours on low.
7 Stir in parsley, basil, and tomatoes and continue cooking an additional hour.
8 Serve hot.

THat sounds yummy but I'm not sure my taste buds would like it. I'm kind of a wimp when it comes to food. :lol:

I actually found this on Pinterest and we have made it twice already. It is so yummy and easy and our go to meal on a busy night.
4 chicken breasts...I just put mine in frozen straight from the bag
1 jar salsa
1pkg taco seasoning
1/2 cup chicken broth
Cook on low for 4-6 hours...shred the chicken and serve wrapped up in warm tortilla shells with all the fixins...cheese, lettuce, tomato, guacamole, black olives.
