I can't believe how many don't eat the skin! What a waste of calories. You're not even getting the vitamins.

I pole holes with fork all around it then rub ours with a little bit of olive oil, put sea salt on it and bake on rack in oven. I don't use tin foil, since I like to bake not steam it. Then just pinch the two ends in towards each other of potato when cooked and it pops open. Nice crispy skin, and soft insides. Usually just use a little butter.

I agree. I'm not a fan of the skin but I still eat it for the nutrients in them :)

Oh, I thought you HAD to cover it in foil. :P
I'm trying without foil now. :)

I thought that for a long time too, because my mom always did it. Then I saw alton do it without foil, and love it.

Mashed potatoes with the skin is the BEST! ♥
I suck at making homemade mashed potatoes though. I somehow manage to f**k it up. It's never fluffy and it's more potato salad-y. :P
