So I tried experimenting this week and actually came up with a pretty amazing recipe. I love it, but then again I love food...
Lemon Curry Chicken w/ Sauteed Onions & Garlic.
( can add to the vegs or herbs if you so wish to, just make sure it pairs well with lemon chicken!.)
3-5 Chicken Breasts, boneless (If big fat breasts, I suggest cutting them in half.)
1 onion, red or white. (red is more of a sweet addition.)
Peeled, and sliced.
4 Fresh garlic cloves, sliced. ( I used 4 cloves, but some people prefer more or less garlic)
2 tbsp Lemon Juice (fresh lemon works too)
2 tsp Mojo seco seasoning aka Dry Mojo
2 tsp Yellow Curry
1 tsp Black Pepper
1 tsp White Pepper
2 tsp Kosher or Sea Salt ( I use kosher on a reg. basis but due to being on a heart healthy diet I've switched to sea)
2 tsp Garlic Powder
2 tsp Onion Powder
First off heat your oil (i use extra virgin olive) in a non-stick pan.
While oil is heating slice your onion, and garlic, if needed your chicken as well.
Place chicken in bowl and add lemon juice, if preferred you can kick it up a little with the lemon, then add seasonings and toss to coat.
Let sit for 10-20 mins in fridge while oil is heating.
Once oil is heated place your onion and garlic into the pan, slightly sear them before adding Chicken breast.
Approx. 5 mins.
Add chicken breast.
Stir veggies and herbs to ensure they don't burn.
Simmer everything together until veggies are done and chicken is golden brown.
Serve chicken covered in onions&garlic over white rice, or with a fresh side salad and rolls.
Simmer in Zesty Italian dressing.
Simmer in Mojo Criollo.
Add red wine vinegar, salt, and pepper to onions and garlic in a bowl before adding to heated oil.
I suggest heating oil on 5-8
searing and simmering should be done between 5-6 depending on your stove.
