Yeah, I don't like mexican lasagna very much, either. I'm not super huge into any kind of pasta/lasagna though.

I usually have a meatless option for at least one day a week but, I guess I wasn't feeling that this week. My menu this week is:

*Creamy Rotini with chicken sausage, peppers & broccoli (a one pot meal)
*Asian Chicken Lettuce Wraps & Potstickers
*Tom Kha Gai with Thai Salad (with lots of fresh herbs, peppers, chiles, onion & ginger soy dressing)
*Spaghetti Bolognese with side garden salad and dinner rolls
*Grilled Salmon with Cajun Cream Sauce and "Dirty" Quinoa w/roasted haricot vertes
*BBQ Pork Sliders (in the crock) with Ranch Potato Salad and Southern Slaw

Oh, weird. I've had one that was like regular lasgna set up, layered noodles, cheese, but with like, taco meat & refried beans instead of red saucey meat. Lettuce and veggies and crushed chips on top.
