What are some of your favorite easy vegetarian meals?? I want to cook something new!
I am a giant fan of chili cornbread casserole. And stuffed bell peppers. And another BG mama turned me onto enchilada casserole which is amazing.

I make a veggie lasagna that we make one night and it lasts for three nights of left overs. I also love fritatas!

I like spagetti topped with stuffed portobella mushrooms.

I've got veggie soup in the crockpot!
Ingredients:
1 16 oz package of frozen green beans
1 12 oz package of frozen broccoli
1 8 oz package frozen corn
1 8 oz package frozen peas
1 8 oz package baby carrots (fresh), chopped
1 46 oz can of tomato juice
1 onion
Seasonings (I used garlic powder, TS seasoning salt and TS spinach and herb dip mix)



Chop and saute onion and chop carrot. Combine in crockpot with frozen veggies, 1 can of tomato juice and one can of water (refill the can of tomato juice) and seasoning. Cook on high 4-6 hours or low 6-10.



I'm going to cook some elbow macaroni separately and serve the soup on top of it.
