I was veggie for 8 years, and my Aunt is vegan. For me it just depends on what food you like to eat. You can make all the same cheap meals that you can make with meat, just substitute it for some veggies of soy meat. It didn't really cost more for me, I did my grocery shopping anywhere but for those really yummy vegan or veggie foods I went to Whole Foods or Trader Joe's. My Aunt does a lot of cooking, and has this farm share thing where they send her fruits or veggies from the farm that are in season that month. She just takes those and tries new vegan food with that. That way she's not eating the same thing all the time, can come up with creative recipes, and has fresh produce. My Uncle is pretty supportive of her, and just eats whatever she makes, but if he doesn't like something or wants to eat meat then he will prepare it for himself. But it has really cut down on their grocery costs cutting almost all the meat out from their list. I was a veggie because I thought meat was disgusting, and I thought the way they raise and slaughter meat was inhumane. My Aunt has pretty much the same mentality. My son hates meat, and refuses to eat it so I'm mostly veggie now and it makes my grocery budget a lot easier on my wallet. I say go for it!! If it doesn't work for you, you can always go back :]

Well, tell him that it's important to you to try this out, and that you will make sure you get enough nutrients. You could buy very small things of meat, prepare them at the beginning of the week and then add it into his meals. If he's still being a jerk about him then tell him he can buy some hungry man frozen dinners and deal with it, haha.
