So I have chicken pulled out dinner in about 2 hours. I am on a high protein low cal "diet" so I need healthy options. What should I do with it? Veggies are broccoli and cauliflower.

Marinade it in some low fat, low cal Italian dressing then bake it.

This is what I'm gonna make soon



lots of fresh vegetables (peppers, carrots, onions, potatoes, sweet potatoes), layered with spice rubbed boneless chicken ~ (paprika, cumin, fresh minced garlic, olive oil, dash of vinegar, salt, pepper) ~ cover in lemon slices (1 lemon) ~ seal with foil ~ bake at 425 degrees for at least 45 minute.

Id prob just grill the chicken and sautee the coliflower and broccoli in some spices.. maybe garlic and salt, or lemon pepper if you have any

I was thinking I might bake it with salsa. The veggies are the steamer bags.

It's so good with salsa baked on it. I baked it with salsa verde last night.

Salsa isnt to bad for me and Will loves salsa so I will probably do that.

Cut up a variety of veggies into cubes (peppers, zucchini, mushrooms, broccoli are our favourite) and cut up chicken into cubes. I usually make the chicken first and season it with just salt and pepper. As it cooks take out another pan for the veggies, soften garlic, ginger, and onion then add the veggies - you can add spices here too, I do pepper and garlic/onion powder usually. Pour a little water in and put the lid on to help steam them as they cook. When the veggies are soft but still a little crispy (ie. not mushy) add the chicken into it and some sauce (we do terriaki). Mix until hot. Serve over rice. Voila lol
