Add a touch of milk and heat slowly.

How are you melting it?
The proper way to melt chocolate is over simmering (not boiling) water in a double boiler, being careful not to get any water in the chocolate, which will cause it to seize. If you're doing it for a coating, adding a little butter will make the coating more pliable/easier to bite into. You stir the chocolate over the water until it's almost all smooth, then remove it from the heat and stir until completely smooth.
