This is literally the best new recipe I've made. Another Mama posted it on here maybe 2 weeks ago and I've made it 3 times since :oops: it's so delicious.

MEXICAN CHICKEN
1 pound boneless chicken breasts
1 teaspoon Seasoning for Tacos
Salt, to taste
1/2 cup enchilada sauce
4 ounces cheddar cheese, shredded
3 green onions, chopped



Sprinkle the chicken on both sides with taco seasoning; grill or saut

Yummy sandwich bread



yeast
1/3 C warm water
1 tbl honey
2 C all purpose flour
1 C whole wheat flour
1 C spelt flour
1 tsp salt
1 C warm milk



proof yeast in honey and water
mix flour and salt in separate bowl
add milk to yeast mixture, mix well
gradually add flour mix 1/3 C at a time, you may or may not need all of it
If you need to add flour I would suggest using either the spelt or all purpose flour
Knead dough until smooth
Allow to rise in a warm place for an hour or until almost doubled.
agressive hand knead the dough until flat and all the bubbles are out
roll it up to form a loaf
Preheat oven to 375 F
place in well greased loaf pan and allow to rise for 1/2 hr or until almost doubled
bake for 50-60 min. (glass takes longer) rotating 1/4 turn every 10-15 min. to help with even browning
Loaf will be medium to deep brown when done and will sound hollow when thumped on the bottom
Immediately place on cooling rack
If you desire a softer crust either brush with butter while still hot or place in plastic bag when loaf is nearly cooled and transfer to a different bag once fully cooled.



If kneaded aggressively enough before the second rise there should be very few bubbles and this will yield a nice firm loaf that can even take refrigerated peanut butter spread on it without tearing. I find it's easier to get good not so crumby slices if I refrigerate my loaves before slicing.

For the crock pot:



Salsa Chicken. Serve over white rice.
Om nom nom



3-4 frozen chicken breasts
1 can of cream of mushroom soup
Salsa of your choice
Taco seasoning packet




Place chicken in the bottom of crock pot.
Mix soup, about half a jar of salsa (more of less, depending on your tastes) and 1/4 of the taco seasoning (again, more or less depending on your tastes) to a bowl and stir together.
Pour mixture over chicken and cover.
Cook on low for eight hours. Do not lift the lid!



When done, serve over white rice with a dollop of sour cream and shredded cheddar cheese.



I've made it twice so far and it's SO good.
