But I don't have any ginger, neither fresh nor powdered, nor candied. Not a stitch of ginger...but I have everything else and really wanted to make these tonight. Should it be a no go without the ginger tonight and hit up walmart for it tomorrow, or can I make them without it? I am not sure if ginger is a very important ingredient in carrot cake, as I have never made it before from scratch and couldn't find anything out from google.

I've never put ginger in my carrot cake and it always turns out fine. :)

I just wasn't sure. I have fresh carrots, I was hoping minced carrots would be what gives it the "carrot-cake" flavor.

The ginger gives it that "spicey" flavor you usually get with a carrot cake. You can use cinnamon or nut meg or all spice instead... or even pumpkin pie or apple pie spice. It's pretty much all the same. haha

I do have cinnamon. This is my first time making these, so its not a huge deal if they don't have the spice flavor I guess. The way I see it, I am going to end up with a muffin with cream cheese filling, its a win-win situation! Lol

Yep. Carrots and cinnamon. Sooo good omg drooling thinking about it. I have a wicked carrot cake recipe I got offline a few years ago. I wish I could remember the website but I'm drawing blanks right now. Anyways, good.
Those look really good though! I like the idea of the cream cheese inside. Yum

Yes! It has cinnamon and raisins, and shredded coconut and loooots of carrot (along with the basics like flour,eggs) but no ginger. And it's the best!

I totally forgot I have raisins too. I love raisins in my carrot cake!
