Your kids have school on Sunday?

I take my son to a local amusement park for Mothers Day. Then we just have the day to ourselves, to have fun and spoil ourselves. A little reward for being a good mom with a kickass son. He doesn't know it's Mothers Day, so he obviously doesn't say it, but it's just fun to do something different and exciting.

Cook it in the oven on a wire rack above a cookie sheet (with tin foil on it for easy clean up) no popping grease, no third degree burns, no mess, just perfect tasty tasty bacon :)

That sounds like the way to go. My friend has some weird plate thing she uses to cook it in the microwave and it made the most amazingly perfect cooked bacon. I usually just wait til SO cooks it and laugh at him every time he gets popped with grease lol
