So I was looking through my recipe cards and I came across this zesty italian pot roast recipe. It looked really good on the picture and I have about 3 roasts frozen in the deep freeze so I figured I'd give it a go. It was super easy to throw together as well. Cut up some potatoes, carrots and celery. Add a can of diced tomatoes then top with the roast. Then in a seperate bowl mix a can of tomato soup, 1/2 cup water, garlic, basil, parsley and a Tsp of vinegar. Mix it all up and pour it over the roast and cook for 10-12 hours on low or 5-6 on high. I hope it turns out really good. Usually I just huck in a roast with some water and soy sauce and worchestershire sauce and some montreal steak spice seasoning. This is very different :) fingers crossed

It sounds good but DH doesn't like tomatoes. I'd never be able to make it over here. Lol

we aren't to crazy about tomatoes either but if he wants to eat he can suck it up lol.
