I'm changing shifts and my DH only has one more week of class, so we'll actually get to have dinner as a family more than once or twice a week! I need some healthy, easy meal ideas. I feel like we eat the same thing all the time. What are some of your favorite meals? Feel free to link recipes if you'd like! :D

I love me some Shepherd's Pie because you can prep it ahead of time and then pop it in the oven. And there are lots of ways to make it healthier (or less... haha) than any recipe you find. :D

Cilantro chicken burgers are one of my favs. lol




1 poundground chicken
1/2 cupchopped fresh cilantro
1 tablespoonsoy sauce
1 tablespoongarlic powder
1 teaspoonlime juice (optional)
1 teaspoonground ginger
1 tablespoonground black pepper
cooking spray
hamburger buns

1 avocado - peeled, pitted, and sliced (optional)
1/4 cupranch dressing, or to taste (optional)



  1. Mix ground chicken, cilantro, soy sauce, garlic powder, lime juice, ground ginger, and ground black pepper together in a large bowl.
  2. Form the mixture into 4 patties.
  3. Prepare a skillet with cooking spray and place over medium heat.
  4. Cook burgers in the hot skillet until cooked through and no longer pink in the middle, 4 to 5 minutes per side. An instant-read thermometer inserted into the center should read 165 degrees F (74 degrees C).
  5. Serve on hamburger buns with slices of avocado and a 1 tablespoon ranch dressing


Makes 4 burgers. Its so yummy. I serve with sweet potatoe fries or sweet potatoe salad, or fried or baked avocado fries. yummy.

Grilled chicken/fish with mango salsa and a steamed veggie



Sweet Potato Gnocchi (you have to have a taste for this one, its not a general favorite but I love sweet potatoes)



Bavarian spiced pork (pork isn't really healthy but you switch the meat to a lean chicken or something) w/ yukon gold potatoes and brussel sprouts



Cobb salad



Chicken Tagine ( I know this recipe is some where on food network) with rice and peas



Any type of stir fry

Forgot about this one! I love chicken burgers. One pack of ground chicken makes so many burgers, I end up freezing the leftovers.

i love my crock pot! love just chicken in there w/taco seasoning for tacos..we did that last night with turkey since SO just killed a turkey last monday...also chicken cordon bleu in the crock pot is good and so is ranch chicken..omg i find everything on pinterest lol

I've been using the heck out of my steamer! I steam veggies with almost every meal! I'm obsessed! We don't eat pork, so I'd have to swap chicken for that recipe anyway. Thanks for the suggestions!

I was thinking of making ranch chicken tonight. It sounds good, but I've never actually made it. I'll have to Google a recipe!

it's so good! i made mine w/mashed potatoes...do you have pinterest? you can search ranch chicken...soo good, even SO loved it and he HATES everything! lol

No, I don't have Pinterest, but I just got a simple recipe off the Hidden Valley website. That's what I'm making tonight! :)

I love to make veggie lasagna but you can add some chopped chicken to it. Its SUPER easy and provides lots of leftovers.



Buy the lasagna that you do not need to cook ahead. You will also need grated parm cheese and shredded mozzarella or mixed italian cheese.



I buy two or three bags of various mixed frozen veggies (believe it or not, the frozen veggies are often fresher than the "fresh" veggies). I chop up some fresh bell peppers and onions. Toss all the veggies into a pot with a little broth or water to cook. Drain after cooking. Cook 1 block of frozen chopped spinach as directed. Drain.



Then I prepare 3 bags of Creamy Pesto McCormick's sauce (you can also use Alfredo or any sauce you want). Grate some fresh garlic cloves into the sauce. Add extra milk to thin it out at least a 1 cup more because you need to thoroughly coat the lasagna.



To prepare:



Follow the directions of the "no-cook ahead" lasagna. First add sauce to bottom of large baking dish (13x9 is what I use). Then add 3 sheets of lasagna as directed. Put a layer of veggies and sprinkle spinach. Then cheese and top with sauce. Then another layer of lasagna. Repeat steps. When you get to the top, coat with the rest of the sauce and top with cheese. Bake as directed on lasagna box.

This sounds good! DH and I have made eggplant lasagna before. It was delicious, but time consuming!

I love making meatloaf. My family loves it. I do make lasagnas lots and ill make a few and freeze them. They take no time to make but i really hate making them for some reason. Spaghetti is always quick, and so is Alfredo. I like to make it when hubbys not home and add shrimp(he hates shrimp and doesnt let me cook it when hes home or going to be home lol) I also make a lot of chicken casserole dishes. So easy and you just throw stuff in adn let it bake.
