I have never had to make cupcakes or anything prior to a big event or anything before, mostly just make them for the hell of it around here lol

My son has this big end of the year picnic next Wednesday and I am in charge of cupcakes. It starts at 11am.

SO how much ahead of time should I make them?... or can I make them?

I'd probably make them the night before, and then frost them in the morning.

I've never known though if you make them ahead of time if they have to be refrigerated or not...

You can make the cupcakes whenever you want and just throw then in the freezer if its more than 2-3 days ahead! For frosting as close as you can get it!

Depends on the frosting and the local temperature. I took the classes to become a professional cake decorator and we had one frosting recipe that would stand up to almost anything.

I would make them the night before and store them in a container with a lid. I always buy one of those deep aluminum pans with the plastic lids. That way they won't dry out. You can refrigerate them or leave them out as long as they're covered. Also, the pan will help you with transporting them.

That was my issue too!
Don't they stay more moist in the fridge or something? I'm not much of a "baker" lol I can make like cookies, cupcakes and all that but usually it's a EAT IT NOW thing over making ahead for something big.

Make whenever you need to, freeze them until day before. Then thaw, frost, and cover TIGHTLY then refrigerate them until an hour before they need to be taken wherever. I worked in walmart bakery once.

DHs mom is the manager at the Wal Mart Bakery and that's how they do it. She does it this way at home too.

I can comfortably fit about a dozen in each pan, so if you get three of those you should be good to go. And if you're able to do it the night before that's when I'd do it.
