Whats the purpose of letting bread dough rise twice?
One answer I got was, it has to do with creating the gluten structure and another one said, It has to do with distributing the yeast...
Is that all it has to do with? Also, have you ever let it rise just once then baked it? how did it come out compared to dough that had risen twice?
Im just curious, I guess. TIA!!

Any bread recipe I've made, it raised in the bowl and again once in the pan before going into oven.

yes, every bread recipe that I have used said to let it rise twice... im just curious about why. What does the second rise do to it?

I assume give it it's fluffy middle and shape.. I don't know lol.
