Cool well I like making a marinade out of white vinegar, lemon juice and plain yogurt. I sometimes add tomato paste as well to make the chicken red. I slice it to let it soak in. Then add spices to your liking and chop onions and hot peppers (like jalapenos) and add to the marinade. Common spices I use are lemon pepper, curry, salt, Italian herbs, cayenne and paprika. Let it marinate at least 4 hours and then you can bake it on top of sliced potatoes, tomatoes and eggplant. 375 degrees covered for 40 minutes, then uncover it and cook til it gets "crispy" (about another 30 minutes). Its super moist from the yogurt and kinda spicy :) put oil in the bottom of the pan to keep the veggies from sticking and the juice from the chicken will do the rest.
