Throw the chicken in a baking pan with some diced onions, peppers, carrots, garlic, tomato sauce and about a cup of water. Bake covered at 350 for about an hour, then remove the cover, sprinkle on parmesan cheese and bake another 30 minutes. Cook the potatoes and mash them up, serve the veggies in tomato sauce as a gravy of sorts over the potatoes.
ETA: You said fast... that's not so fast. You could turn the temp to 415 and bake for 30 minutes then 15.
Sautee the chicken with onions, green peppers, red peppers, and garlic and make roasted potatoes
