Crock pot chicken enchiladas

I do both red and green.

Red sauce recipe:
Put chicken in crock pot and cover with 2 cans of red enchilada sauce. Cook until chicken is done (about 4 hours on high or 6 on low). Shred the chicken and then add shredded cheese (however much you like) and 4-6 tortillas ripped up. Let the tortillas cook for like 5 minutes. Then top with sour cream and sliced olives.

Green sauce recipe:
Cover chicken with 2 cans of green enchilada sauce and one can of Rotel (I use the lime and cilantro flavor). Add a brick (8 ounces) of cream cheese. Cook the same amount of time as the red, but stir every once in awhile. Shred chicken and add shredded cheese and ripped up tortillas. Top with sour cream and olives. This is also really good on top of rice without the tortillas in it.
