So I've decided to cut wheat out of our diets. I've completely cut it out for about 3 weeks and this weekend I ate things with wheat constantly and now I'm feeling like crap. My question is has anyone done this? Also I've been looking into making our own breads, baked goods. I already make our own sauces and stuff. Who has made wheat/ gluten free bread?? How does it taste?

I make a bad ass wheat , dairy, egg, soy free bread. Oh and delicious banana muffins too.



I use this recipe for the bread but I changed it up a bit bc I didn't have the sorghum flour originally and don't like buckwheat much. One sec and I'll get you the list of flours I sub for the 2 cups she uses. Alternative flours are expensive but they last awhile and you typically use a small amount at a time. I make two loves of this bread and freeze the second in individual slices.

We are gluten free.
Most bread mixes suck. I buy bread from a local place. Expensive but worth it.




FYI incase you don't know you have to make a blend of flours, starches and zanthan gum to make a gluten free all purpose flour

Yeah see I bought all the stuff today, the flours weren't so bad, 4.99-10.99 each. I'm just a bit scared to do it lol! I went to 3 stores today looking for wheat free/ gluten free bread but I didn't have much luck. :(

The banana bread recipe that I use. I use a premixed flour for this, but really I could mix my. Own, I just happened to have a bag that I wanted to use so I kinda stuck with it. I can get you the list of what's in it though, I know it's rice flour but can't think of what else.



I'm not overly fond of the bobs red mill premixed gluten free flour, it's not bad but not what that I use much, it has a weird taste to it, idk why.

King Arthur is way better then Bobs. I have a 5 lb bag of bobs though thanks to Costco lol

These are variations on the flour mix that ive used succesfully with the bread recipe that i gave you. My favorite would be the last two. I finally bought sorghum so I'll be trying that sometime soon. I've heard really good things about it.



Bread mix



1 cup rice flour
1/2 almond
1/2 mix




Or



3/4 buckwheat
1/2 almond
3/4 rice



Or
1/2 buckwheat
1/2 almond
1/2 amaranth
1/2 rice




Or
3/4 rice
1/2 almond
1/4 buckwheat
1/2 pre made bobs mix



Also add 1tsp baking powder to all mixes and I typically use bacon grease instead of oil , just bc it's free and well.. It's bacon.

My Granny, mother, and uncle all have Celiac's disease. For my Granny it is easier to buy premade gluten free breads and such because it is a lot of work.



Kinnikinnick's bread is her favorite. Pillsbury just started making premade gluten free pizza dough, chocolate chip cookie dough, and dough for pie crust. They tried the pie crust and cookies last weekend and they were pretty good.

Thanks soooo much!! And we don't eat bacon lol so I'll just use oil. Could I use coconut oil?

It's not bad, really. You can see from my lists, I throw it in sometimes, I just don't like to use it as the only flour, Kwim. I think it's flavor is too overwhelming that way.

Yep coconut works well , but don't use it to grease the pan, I find it keeps the bread to moist on the bottom.
