What's your favorite way to use it? I made ratatouille and still have some more to use up. I have never cooked with it before.

I don't know how to make it yet. My friend's Italian mother is going to teach me her recipe. I can't wait.

Eggplant parmesan or breaded and then on sandwiches. Mmmm!

We usually use Chinese eggplant and make stir fry with loads of sauce. Yum!

Deep Fried Eggplant. Its not greasy. Very tasty. I change the coating each time. Sometimes its cornflakes,sometimes I use bread crumbs.

Eggplant soup. it tastes like it should be 10000 calories, but it is only about 200 a bowl. Heres a recipe: it's not the one that I made, but it's close
